Decadent Seafood Chowder Recipe
Seafood Chowder
Our comforting Seafood Chowder from the Bar Restaurant.
Ingredients – Serves 4
- 1 TBSP Vegetable Oil
- 1 Fennel diced
- 1 Onion diced
- 2 Leek whites diced
- 700ml Fish stock or chicken stock
- 300ml Pouring cream
- 4 Potatoes peeled and diced
- 800g Seafood mix (haddock, smoked salmon, mussels, claws, prawns or seafood of your choice)
- 2 TBSP chopped dill and or chives
Method
- Cook the diced onion, leeks and fennel, over a medium to low heat until softened
- Add fish stock and bring to a boil
- Add potatoes and cook until soft
- Add cream and keep cooking over a medium heat for 5 minutes, use a hand blender to puree the mix and season to taste
- Add the seafood to the mix and keep cooking gently for 10 minutes until the seafood is cooked on a low to medium heat.
- Pour into serving bowl and garnish with herbs
