Decadent Seafood Chowder Recipe

Seafood Chowder

Our comforting Seafood Chowder from the Bar Restaurant.

Ingredients – Serves 4

  • 1 TBSP Vegetable Oil
  • 1 Fennel diced
  • 1 Onion diced
  • 2 Leek whites diced
  • 700ml Fish stock or chicken stock
  • 300ml Pouring cream
  • 4 Potatoes peeled and diced
  • 800g Seafood mix (haddock, smoked salmon, mussels, claws, prawns or seafood of your choice)
  • 2 TBSP chopped dill and or chives

Method

  1. Cook the diced onion, leeks and fennel, over a medium to low heat until softened
  2. Add fish stock and bring to a boil
  3. Add potatoes and cook until soft
  4. Add cream and keep cooking over a medium heat for 5 minutes, use a hand blender to puree the mix and season to taste
  5. Add the seafood to the mix and keep cooking gently for 10 minutes until the seafood is cooked on a low to medium heat.
  6. Pour into serving bowl and garnish with herbs
